Mash

Having had good success doing a NEIPA with Galaxy, I decided to run another one up but pairing with Simcoe, my favourite hop from the Deeds DKAT single hop series. Using the same recipe as before, I swapped in Simcoe during the boil, upped the size of and split the whirpool and dryhop 50/50 with Galaxy.

  • 1kg Maris Otter

  • 750g quick oats

A few handfuls of rice hulls, a pretty smooth mash

Boil

  • 60m - 12g Simcoe

  • 30m whirlpool - 38g simcoe, 50g Galaxy

  • 30m - 50g Galaxy

Ended up around 1.060

Fermentation

Made use of a second generation Verdant NEIPA yeast, dry hopped on day 3.

  • 100g Galaxy

  • 100g Simcoe

Finished out around 1.010

Taste

I bought a new microgram scale, meaning my water profile was bang on this time, and it really shows through. The last one was amazing, but this is just sublime. Flavours are just as big and bold (and better balanced with the simcoe for my palate) but the mouth feel is just fantastic.
